Spinning plates: “Fuck normal, I want magic” – a discussion with two-Michelin-star chef Alexander Herrmann
Alexander Herrmann is one of Germany’s most famous chefs – not least thanks to his appearances on “Kitchen Impossible” or his show “Aufgegabelt”. At his restaurant AURA in the Bavarian town of Wirsberg, which has been awarded two Michelin stars, he adheres to a very special philosophy: More than 80 farmers from the region supply the food laboratory ANIMA, where products are first refined before being delivered to the restaurant kitchen to be prepared into meals. This concept is the basis of his book AURA & ANIMA, which he has co-written with his cooking partner Tobias Bätz.
In conversation with YouDinner founder Miguel Calero, Herrmann reveals how it is possible to work with high-quality regional products even outside of the growing season. Incidentally, the most-photographed object at AURA is a large mirror artwork by artist Mateusz von Motz, which says: “Fuck normal, I want magic” – a passionate commitment to unique cuisine.
